Dark Chocolate Pancakes

An old crowd favourite with a salty, twist! These pancakes are simple to make and pair perfectly with a warm cup of tea, curled up on the couch with a loved one in-front of the fire.
Ingredients

250ml almond milk
-
130g spelt flour
- 2 eggs
- 2 tbsp cacao powder
- 1 tsp baking powder

A pinch of salt
-
1 tbsp coconut oil, for frying

80g Chocolate and Love Sea Salt & Vegan Caramel 65% Dark Chocolate, melted

1 tbsp coconut oil
-
Handful of strawberries
-
Dollop of coconut yogurt
For the sauce
For decorating
Directions
In a bowl whisk the eggs, the pinch of salt, then gradually add 2/3 of the almond milk.
Add the rest of the ingredients & stir until the batter becomes smooth.
Add the remaining almond milk.
Once everything is mixed set the batter aside.
Prepare your chocolate sauce by melting the chopped chocolate bar in a water bath.
Add coconut oil & let it sit over the warm bath.
Begin cooking the chocolate pancakes.
Heat up a skillet over medium heat & coat with coconut oil by using a silicon brush.
Cook each side of the pancake for 2-3 minutes or until golden brown. Adjust the heat if needed to avoid burning.
Stack all pancakes ontop of each other & place pre-cut strawberries & coconut yogurt in-between some of the pancakes.
Decorate with the melted sea salt and caramel chocolate sauce, strawberries & coconut yogurt - Serve warm & enjoy!
