Dark Chocolate Banana Bread Recipe

This banana bread ticks all the boxes, it’s healthy, gluten free, vegan and contains no added sugar. Plus, most importantly, it tastes delicious. It’s the perfect companion to a lazy afternoon with a cup of tea, or a post exercise snack. Tip: make double while you’re at it and slice and freeze for another day.
Ingredients

2 tbsp of flax seeds

5 tbsp of water

2-3 bananas

60ml of oat milk

1 tbsp lemon juice

50g dates 1 tsp vanilla

100g blended almonds & keep a few for the topping

100g blended gluten-free oats

1 ½ tsp baking powder

½ tsp of salt

80g Chocolate and Love's Rich Dark 71% organic chocolate
Directions
Blend flax seeds and water and set aside for 10 minutes.
Blend bananas, oat milk, lemon juice, dates, vanilla and the flax seeds in a blender.
Mix almonds, oats, baking powder and of salt.
Combine all the ingredients in a bowl. Chop a Chocolate and Love Rich Dark 71 % bar into nice pieces and add ¾ of the chopped chocolate bar into the other ingredients.
Pour the dough into a mould lined with baking paper (size: fit for a small bread).
Top the cake with the rest of the Rich Dark 71% bar ¼ and some chopped almonds and bake the cake for approx. 35-40 minutes at 160 degrees.
