Mint Chocolate Mini Bundt Cakes

Fresh little cakes filled with chocolate. They are great for the festive season.
350ml nut / oat milk
1 tbsp apple cider vinegar
130g dark sugar
190g cup flour
1/2 tsp baking soda
2 tsp baking powder
60ml coconut oil, melted
65g cacao powder
1 tbsp vanilla extract
1/4 tsp salt
1 drop peppermint extract
1 tsp cacao nibs
1 banana, mashed
100g Chocolate and Love Rich Dark 71% dark chocolate, chopped or melted
Preheat the oven to 180°C.
Mix wet and dry ingredients in separate bowls.
Combine your two mixtures together.
Bake at 180°C for 35-40 minutes.
Decorate with chocolate, powdered light brown raw cane sugar, and fresh mint.
