These chocolate mint cookies are as easy to make as they are delicious. Topped off with a fresh, minty topping they will definitely not last very long before being eaten!
Ingredients

250g butter, softened

350g brown sugar
-
2 large eggs
-
350g self-raising flour
-
100g cocoa powder
-
80g bar Chocolate and Love Mint 67%, chopped

1 tsp butter, melted
-
2x 80g bar Chocolate and Love Mint 67%, melted

Pre-heat the oven to 180°C.
Whisk butter, sugar & pinch of sea salt together until light & fluffy.
Whisk in the eggs one at a time.
Sift in flour & cocoa powder, then mix everything together.
Add chopped chocolate chips and fold in gently.
Place your cookie mixture onto baking paper using 2tbsp per cookie & spacing them out evenly.
Bake for 12-15 minutes until each cookie is spread out & has a crust on the outside.
Let the cookies cool slightly.
Topping
Melt your butter & mint 67% chocolate together using a bain-marie method.
Dip each cooled cookie into this mixture.
Let it cool.
