Who wouldn’t mind starting the day with the delicious aroma of freshly made vegan Banana Peanut Butter Pancakes coming from the kitchen? These yummy pancakes are topped with Chocolate and Love's Orange 65% dark chocolate and fresh raspberries, our mouths are watering already!
Ingredients
-
80 grams of ground oats (oatmeal)
-
1 ripe banana
-
1 heaped tsp peanut butter
-
1/2 tsp baking soda
-
1/2 tsp baking powder
-
2 tbsp maple syrup
-
About 200-220 ml of water
-
1/2 teaspoon cinnamon
-
3 tbsp chia seeds mixed with 3 tbsp water (this replaces the egg)
-
Chocolate and Love's Orange 65% dark chocolate pieces
Directions
Mash the bananas in a bowl using a fork.
Add the oatmeal and a pinch of salt.
In another bowl, make the "egg" from the chia seeds and let it stand for a few minutes.
Add the peanut butter, maple syrup and water to the oatmeal mixture.
Finally, add the baking soda, baking powder, cinnamon and mixed chia seeds.
Heat a little oil in a pan and fry the pancakes ~ two large tablespoons of dough at a time ~ on a low temperature.
Tip: It's okay if the dough gets a little thick, as it stays soft after baking.
