The tanginess of classic Irish soda bread is the perfect backdrop for the flavour of our orange chocolate. Combine it with the slight sweetness and crumbly texture of the traditional scone and you get a bun that is perfect slathered in butter at the Sunday brunch.
Ingredients
-
250-300 g flour
-
1 tsp baking soda
-
150 ml buttermilk
-
50 ml fresh orange juice
-
1 egg
-
25 g butter, soften
-
1-2 tsp salt
-
1 tsp sugar, heaped
-
25 g chopped Orange 55% dark chocolate from Chocolate and Love
-
Zest of 1 orange
Directions
Mix 250 g of flour together with the baking soda, salt, sugar, chocolate and orange zest in a bowl with a fork. In another bowl whisk together the buttermilk, orange juice and the egg.
Crumble and combine the soft butter into the flour mixture, until it has the consistency of wet sand or bread crumbs.
Make a well in the flour mixture and pour in the buttermilk mixture. With a fork combine the two until the dough just comes together don't knead it.
If it is really wet, add more flour, but not too much. This dough has to be sticky and you should only just be able to handle it with your hands.
Divide the dough into 6-8 portions and place them on a lined baking tray. Bake for approx. 12 minutes at 200°C hot-air oven or approx. 15 minutes at 175°C in a normal oven.
