This coconut and chocolate marble loaf cake made with our Rich Dark 71% Dark Chocolate and topped with strawberry jam will leave you wanting more!
Ingredients

30g Chocolate and Love Rich Dark 71% dark chocolate, melted

3 eggs
-
110g caster sugar
-
120g melted butter
-
1 tsp vanilla essence
-
120g Greek yoghurt
-
200g plain flour
-
1 tsp baking powder
-
1 tsp bicarbonate soda

Pinch of salt
-
25g desiccated coconut & extra for topping
-
25g strawberry jam
Directions
Pre-heat the oven to 180°C.
Grease & flour your loaf tin.
In a stand mixer/electric whisk, add eggs & sugar and whisk on a medium speed for 3-5 minutes.
Reduce speed to low & add the butter, yoghurt & vanilla.
In a separate bowl sift flour, baking powder, bicarb & salt.
Take all ingredients from step 4 & 5 and mix them together, scraping down the sides.
Split batter into two, add the coconut to one & cooled, melted Rich Dark 71% dark chocolate to the other.
Dollop into your prepared loaf tin, swirl & then run a knife horizontally down the middle before placing in the oven.
Bake for 35-40 minutes or until a skewer comes out clean.
Allow to cool in your loaf tin then let jam melt down with a little hot water, brush all over the top & sprinkle with coconut to decorate.
